Placintele dospite cu urda si marar

Zilele astea am tot incercat diverse retete de aluaturi dospite, de paine sau patiserie. Unele mi-au adus zambetul pe buze pentru ca semanau cu retete pe care le mai vazusem la Buni a mea, altele au fost complet noi dar care au fost o surpriza frumoasa. Am ales cateva care mi s-au parut de pastrat.Printre ele se afla si o reteta de placintele dospite cu urda si marar.Mie imi plac aluaturile pufoase, cu textura aerata. Mi-a luat ceva timp sa gasesc reteta cea mai apropiata de ceea ce imi facea Buni cand eram mica. In zona noastra se fac placintele sau branzoaice cu urda dulce si marar. Nu este o combinatie pe care o iubeste oricine, ori iti place, ori te feresti mereu de ea. Eu am crescut cu gustul si cu mirosul lor, cu aroma pe care nu o pot uita. Si toate astea imi aduc aminte de Buni de care mi-e atat de dor! Daca as putea sa o aduc inapoi macar pentru cateva clipe,as face-o!Copil fiind, nu mi se parea important si interesant sa imi scriu retetele de familie. Acum cu greu recreez ceea ce imi aduc aminte. Asa ca daca aveti bunici sau strabunici care va mai pot spune din retetele si secretele bucatariei noastre, apucati-va de scris.Ingredientele folosite pentru aceasta reteta sunt urmatoarele:
-600gr faina alba de cozonac
-350ml lapte
-3 galbenusuri mari + 1 galbenus pentru uns (optional)
-100gr unt topit
-50gr de zahar
-vanilie
-coaja rasa de lamaie
-50gr de drojdie
-putina sare
Pentru umplutura:
-500gr urda dulce
-100gr zahar
-1 ou
-o manuta de marar
Cum am procedat.
Am pus faina, zaharul, sarea, drojdia sfaramata (am folosit proaspata), vanilia si coaja de lamaie in bolul in care am mixat si am amestecat cu o spatula.
Apoi am adaugat galbenusurile si laptele si am inceput sa mixez la viteza mica pana s-a omogenizat aluatul.
Untul l-am topit dar nu l-am infierbantat, dupa care l-am adaugat treptat, in timp ce mixerul framanta. Cu totul mixerul a framantat vreo 10 minute, cu pauze in care am mai dat aluatul de pe peretii bolului cu o spatula de silicon. Aluatul trebuie sa nu mai fie lipicios in momentul in care ati terminat de framantat, fie cu mixerul sau cu mana. Am transferat apoi aluatul intr-un bol uns cu ulei pe care l-am acoperit cu folie de plastic. Aluatul a crescut asa cum vedeti mai sus-si-a dublat volumul.
Intre timp am preparat umplutura. Urda sfaramata se amesteca impreuna cu mararul taiat marunt si cu zaharul. In final se adauga oul si se omogenizeaza compozitia.
Am intins aluatul pe masa unsa cu ulei si l-am taiat sub forma de patrat. Pe fiecare bucata am pus urda si am lipit colturile opuse. Pliculetele obtinute se pun in tava si se mai lasa la dospit inca 20-30 de minute.
Am preincalzit cuptorul la 190 de grade dupa care am pus tava pe treapta din mijloc. Placintelele mele au inceput sa se rumeneasca in cca 10 minute.Dupa vreo 20 de minute le-am uns cu galbenus de ou si le-am lasat sa se coaca in continuare.Placintele mele s-au rumenit frumos si au fost delicioase. Le puteti servi fierbinti, calde, reci, cu lapte, cu zahar pudra. Vor fi minunate.
