Pandispan pufos cu visine si smochine

Chiar daca este Noiembrie, e frig si deja facem pregatiri pentru vacanta de 1 Decembrie sau chiar de Craciun, nu inseamna ca nu putem pregati o prajitura pe cat de simpla, pe atat de gustoasa-pandispan cu visine sau chiar pandispan cu visine si smochine.

Pentru aceasta prajitura veti avea nevoie de urmatoarele ingrediente:
-12 oua
-12 linguri de zahar
-14 linguri de faina
-4 linguri de ulei
-1 pliculet de praf de copt
-putina sare
-vanilie
-coaja de lamaie rasa
-visine si/sau alte fructe

Am separat albusurile de galbenusuri. Albusurilor le-am adaugat asa cum spune la carte un praf de sare dupa care am mixat energic timp de cateva minute.
Cand albusurile si-au dublat volumul, am adaugat cateva linguri de zahar si am mixat. Am continuat pana ce am pus toata cantitatea de zahar. Am obtinut o spuma ferma, lucioasa.

Galbenusurile le-am amestecat cu ulei. Acesta se adauga treptat-o lingura si se amesteca, inca o lingura si se amesteca-cam la fel ca la maioneza.

Compozitia obtinuta din galbenusuri si ulei se adauga treptat in spuma de albusuri, amestecand cu o spatula de silicon de jos in sus. Miscarea este foarte importanta deoarece astfel vom pastra volumul albusurilor si implicit al pandispanului. Faina se adauga in acelasi mod. Se pun cate 2-3 linguri in ploaie dupa care se amesteca de jos in sus. La final se adauga praful de copt, vanilia si coaja de lamaie.

Compozitia obtinuta este suficienta pentru o tava obisnuita de cuptor cu dimensunile de 44×37.5cm. In seara in care am facut fotografiile pentru aceasta reteta, am facut doua prajituri-una intr-o tava mare – cu visine, si una intr-o tava mai mica, numai cu jumatate din cantitati-cu visine si smochine. Asadar, daca vi se parea ca prajitura este prea mare sau ca folositi prea multe oua, atunci puteti oricand prepara pandispanul intr-o tava mai mica si cu niste cantitati mai mici. Visinele au fost scurse bine inainte de a le pune in prajitura si nu au fost tavalite in faina. Smochinele au fost proaspete, taiate in felii potrivite.

Aproape orice fruct se poate folosi la aceasta prajitura. Nu veti avea probleme cu fructele-nu se vor duce la fundul tavei si nu se vor lipi deoarece compozitia blatului este destul de ferma incat sa le mentina.
Prajitura se poate servi pudrata cu zahar sau simpla, alaturi de un suc proaspat, de o cafea sau un ceai. Musai langa cei dragi!Pofta buna!  🙂
