Dulceata de trandafiri

Saptamana trecuta, in timp ce ne pregateam pentru scurta vacanta de Rusalii, am primit o punguta cu petale de trandafir de dulceata. Mi-ar fi parut rau sa le arunc si in mod sigur nu ar fi rezistat inca patru zile pana cand ne intorceam. Asa ca m-am mobilizat si am facut dulceata.
Nu am mai facut de ceva timp si nu mai stiam exact cantitatile. In final am combinat doua retete. A iesit o dulceata incredibil de parfumata si colorata.
Mi-am adus aminte de o vecina de-a bunicii. Doamna respectiva provenea dintr-o familie veche, instarita si a face dulceata de trandafiri, visine, cirese amare, nuci si chiar serbeturi, era o traditie. Nu stiu ce retete folosea dar imi aduc aminte cu drag de Tanti Maria si dulceturile dumneaei. Din pacate nici una din cele trei fiice nu cred ca a mostenit retetele si daruirea dumneaei.
Am inceput sa imi pregatesc dulceata sperand ca ma voi apropia ca gust de cea pe care ne-o servea Tanti Maria vara, cu un pahar de sifon rece alaturi.

Cantitatile folosite au fost urmatoarele:
– 500 g de petale de trandafir
– 750g zahar tos
– 375 ml apa
– zeama de la doua lamai mari
Am spalat petalele de trandafir intr-o strecuratoare. In mod normal ele trebuiau spalate inainte de a fi desprinse – eu asa le-am primit-desprinse. Se scurg bine si se pun intr-un castron. Eu nu am rupt partea alba a petalei, desi in una din cartile consultate scria clar ca se rupe sau se taie cu o foarfeca.
Peste petalele din castron am pus 3-4 linguri de zahar si le-am frecat bine. In final am adaugat doua linguri de zeama de lamaie si am amestecat. Am acoperit cu un film de aluminiu si am inceput sa prepar siropul.
Zaharul ramas si apa se pun la fiert intr-o cratita. Cand zaharul s-a dizolvat si siropul a inceput sa fiarba cu bulbuci mari, am pus petalele de trandafir si zeama de lamaie ramasa. Am lasat sa fiarba cateva minute dupa care am incercat consistenta siropului pe o farfurie curata si uscata, deschisa la culoare. Cand picaturile devin precum un jeleu (nu curge usor), dulceata este gata.
Dulceata se pune in borcanase curate si uscate. Eu am avut din cele cu garnitura de cauciuc si capac de sticla.
Pana cand vom avea propriul nostru trandafir pentru dulceata, ne delectam privirea cu altii, din gradina.
