Sarmale cu varza murata si afumatura in oala de pamant / Pickled cabbage rolls with smoked meat in ceramic pot

Dupa ce petrecerile de Anul Nou s-au terminat este momentul sa trec din nou la treaba si sa va dau o reteta de sarmalute.
Sarmalele se pot face in multe feluri. Eu va prezint decat o varianta. Este o reteta pe care o stiu de la mama si care noua ne place mult si m-am gandit ca ar fi frumos sa v-o impartasesc.

Ingrediente:
– 1 kg carne tocata (vita si porc)
– 200 g orez
– 2 verze murate mari
– coasta afumata de porc
– boia dulce
-cimbru
– piper
– foi de dafin
– cuisoare

After all the parties for the New Year ended it’s time for me to get back to work and to give you a recipe for pickled cabbage rolls – “sarmalute” in Romanian.
We can cook sarmalute in many ways. I will tell you about one way of cooking sarmalute. It’s a recipe from my mum that we like much and I thought that it would be nice to tell you about it. 
 
Ingredients:
– 1 kg minced meat (pork and beef)
– 200 grice
– 2 big pickled cabbages
– smoked pork ribs
– sweet paprika
– savory
– pepper
– bay leaves
– cloves

Amestecam carnea cu orezul si 150 ml apa. Apoi adaugam boia, cimbru si piper. Optional puteti pune sare. Eu nu am pus pentru ca mi s-a parut ca varza va lasa suficienta sare.
We mix the meat with rice and 150 ml of water. Then we’ll add paprika, savory and pepper. Optionally you can add salt but I didn’t because I thought that cabbage will leave some salt.

Taiem varza si o spalam bine cu apa calda pentru a elimina din saramura. Daca frunzele sunt prea mari le puteti taia in doua sau patru bucati. Fiecare frunza se va curata de nervurile proeminente.
Apoi se impatura sarmalele exact ca aici .

We cut the cabbage and we wash it well with warm water to eliminate the salt from the brine. If the leaves are too big you can cut them in two or four pieces. Each leaf will have the prominent nervures removed. 
After that we’ll fold the rolls just like here .
Sarmalele se vor pune in oala ceramica. Aceasta trebuie lasata 20 de minute in apa.
Se taie varza si se pune pe fundul oalei. Apoi se asaza coastele afumate si sarmalele in cerc, se adauga frunzele de dafin si cuisoarele, se pune varza deasupra si se toarna apa. Oala se pune in cuptorul neincalzit. Se aprinde focul si se lasa sarmalele sa se fiarba pana cand varza de deasupra e moale. Eu le-am lasat sa fiarba incet cca 3 ore. Daca mai este necesar adaugati apa in timpul fierberii.
Cabbage rolls will be put in the ceramic pot. This pot has to be left in water for 20 minutes. 
We cut cabbage and we put it in the pot. After that we’ll put the ribs and the rolls arranged in circles, we’ll add the bay leaves and cloves, we’ll put the cabbage on the top and we fill the pot with water. The pot will be put in the cold oven. It will be turned on when we put the pot. We’ll let the rolls to boil until the cabbage from the top is well boiled. I left them to boil slowly for three hours. If it’s necessary you can add water while the rolls are boiling.
 

Noi am servit sarmalutele cu un pic de smantana. De data asta nu am mai facut mamaliguta pentru ele dar voi puteti sale serviti cum doriti.
We served the rolls with sour cream. This time I didn’t cooked polenta but you can serve them as you wish.
